Ingredients

  • 1 large ripe avocado
  • 1 tablespoon freshly squeezed lime juice
  • 1 (15-ounce) can black beans, rinsed and drained
  • ½ cup thawed or drained corn
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • ½ teaspoon cumin powder
  • ¼ teaspoon chili powder
  • Salt and black pepper to taste
  • 4 large (10-inch) flour tortillas

Instructions

  1. In a medium-sized mixing bowl, add the mashed avocado.
  2. Stir in lime juice to prevent browning.
  3. Add black beans, corn, red onion, and cilantro to the bowl.
  4. Sprinkle in cumin, chili powder, salt, and pepper. Fold gently to combine.
  5. Optional: Warm tortillas to make them pliable.
  6. Place a generous quarter of the filling in the center of each tortilla, fold the sides, and roll tightly.
  7. Serve immediately, whole or sliced in half.
