- 1 (15-ounce) can black beans, rinsed and drained
- ½ cup thawed or drained corn
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh cilantro
- ½ teaspoon cumin powder
- ¼ teaspoon chili powder
- Salt and black pepper to taste
- 4 large (10-inch) flour tortillas
Instructions
- In a medium-sized mixing bowl, add the mashed avocado.
- Stir in lime juice to prevent browning.
- Add black beans, corn, red onion, and cilantro to the bowl.
- Sprinkle in cumin, chili powder, salt, and pepper. Fold gently to combine.
- Optional: Warm tortillas to make them pliable.
- Place a generous quarter of the filling in the center of each tortilla, fold the sides, and roll tightly.
- Serve immediately, whole or sliced in half.
