- 4 large chicken breasts
- 2 cups fresh spinach, chopped
- 4 cloves of garlic, minced
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant (around 1-2 minutes). Add the chopped spinach and stir until wilted, then set aside.
- In a bowl, mix the sautéed spinach and garlic with cream cheese and half of the mozzarella. Season with salt, pepper, and oregano.
- Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach mixture, securing it with toothpicks if necessary.
- Place the stuffed chicken into a baking dish and top with the remaining mozzarella cheese.
- Bake for 25 to 30 minutes or until the chicken is cooked through (internal temperature of 165°F).
- Allow the chicken to rest for a few minutes before serving.
