  • 2 cups fresh spinach, chopped
  • 4 cloves of garlic, minced
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant (around 1-2 minutes). Add the chopped spinach and stir until wilted, then set aside.
  3. In a bowl, mix the sautéed spinach and garlic with cream cheese and half of the mozzarella. Season with salt, pepper, and oregano.
  4. Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
  5. Stuff each chicken breast with the spinach mixture, securing it with toothpicks if necessary.
  6. Place the stuffed chicken into a baking dish and top with the remaining mozzarella cheese.
  7. Bake for 25 to 30 minutes or until the chicken is cooked through (internal temperature of 165°F).
  8. Allow the chicken to rest for a few minutes before serving.
