Ingredients

- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper (any color), diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- Juice of 1 lemon
- 3 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper until emulsified.
- Pour the dressing over the salad and toss gently until all ingredients are well combined.
- If desired, sprinkle with feta cheese before serving.
- Adjust seasoning to taste, adding more salt, pepper, or lemon juice if needed.
Notes
For an extra crunch, toss in some roasted nuts just before serving. Allow the salad to sit for about 10 minutes after dressing to let the flavors meld beautifully.
