- 2 pounds potatoes, cubed
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, diced
- 1/2 cup olives, sliced
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Boil the cubed potatoes in a large pot of salted water until tender, about 15 minutes. Check for doneness by piercing with a fork; it should slide through easily. Drain and let cool.
- In a large mixing bowl, combine the cooled potatoes, halved cherry tomatoes, diced cucumber, diced red onion, sliced olives, and chopped parsley.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper until emulsified.
- Pour the dressing over the potato mixture and gently toss until everything is well coated. Be careful not to overmix to maintain the integrity of the potatoes.
- Just before serving, sprinkle the crumbled feta cheese over the top, allowing it to melt slightly into the warm salad.
