Description

A vibrant Mediterranean potato salad featuring creamy potatoes, juicy tomatoes, and tangy feta, perfect for summer gatherings.


Ingredients

  • 2 pounds potatoes, cubed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup olives, sliced
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Boil the cubed potatoes in a large pot of salted water until tender, about 15 minutes. Check for doneness by piercing with a fork; it should slide through easily. Drain and let cool.
  2. In a large mixing bowl, combine the cooled potatoes, halved cherry tomatoes, diced cucumber, diced red onion, sliced olives, and chopped parsley.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper until emulsified.
  4. Pour the dressing over the potato mixture and gently toss until everything is well coated. Be careful not to overmix to maintain the integrity of the potatoes.
  5. Just before serving, sprinkle the crumbled feta cheese over the top, allowing it to melt slightly into the warm salad.
