Description

Delicious cupcakes bringing the classic flavors of apple crisp into individual treats with a crunchy topping.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup apples, peeled and diced
  • 1 tsp cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup quick oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another large bowl, cream together the softened butter and granulated sugar until fluffy and light in color.
  4. Add the eggs one at a time, stirring well after each addition, then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  6. Fold in the diced apples and cinnamon until evenly distributed.
  7. Fill each cupcake liner about two-thirds full with batter.
  8. In a small bowl, mix together brown sugar, oats, and optional nuts to create the topping.
  9. Evenly sprinkle the topping over each cupcake.
  10. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  11. Allow the cupcakes to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Avoid overmixing for fluffy cupcakes. Store leftovers in an airtight container for up to 3 days.
