- In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture, gently combining them. Be careful not to overmix; a few lumps are okay.
- Fold in the diced apples, ensuring they’re evenly distributed throughout the batter.
- Preheat a waffle iron and lightly grease it to prevent sticking.
- Pour a portion of the batter into the waffle iron and cook until golden brown and crispy (about 4-5 minutes).
- For the donut shape, heat oil in a deep pan or fryer over medium heat. Scoop spoonfuls of batter and gently lower them into the oil, frying until golden brown on both sides (about 2-3 minutes per side). Use a slotted spoon to remove and drain on paper towels.
- Dust generously with powdered sugar before serving.
