These Apple Pie Oatmeal Bars capture the comforting flavors of apple pie with a rustic oat topping and spiced apple filling.

- 2 cups apples, cored, peeled, and chopped (about 240 g)
- 2 tablespoons unsalted butter
- 1/4 cup light brown sugar, firmly packed (about 50 g)
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 2 tablespoons water
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour (about 180 g)
- 1 1/2 cups rolled oats (about 135 g)
- 1 cup brown sugar, firmly packed (about 200 g)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 14 tablespoons unsalted butter, cut into pieces (about 196 g)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish or line with parchment paper.
- Prepare the apple filling: In a medium saucepan, melt the butter and add apples, light brown sugar, flour, cinnamon, water, and salt. Cook until apples soften, about 5–7 minutes.
- Make the oat crumb: In a large bowl, combine flour, rolled oats, brown sugar, baking powder, and salt. Blend in butter until crumbly.
- Press half of the oat mixture into the bottom of the pan. Spread the apple filling evenly over it.
- Sprinkle remaining oat mixture on top and bake for about 50 minutes until golden brown and bubbly.
- Allow to cool completely before slicing into 12 bars.
Notes
Best served warm with ice cream or can be stored for several days at room temperature or refrigerated. Freezes well for up to 3 months.
