Ingredients

  • 2 pounds boneless skinless chicken thighs (about 8 pieces)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder

Instructions

  1. Remove chicken from refrigerator 20 minutes before cooking. Pat completely dry with paper towels.
  2. Season both sides with salt. Wait 2 minutes, then add remaining spices: black pepper, garlic powder, smoked paprika, and onion powder.
  3. Preheat oven to 400°F (200°C) with the rack in the center position.
  4. Brush a baking sheet with 1 tablespoon olive oil. Arrange chicken thighs on the sheet, ensuring there’s space between each piece.
  5. Drizzle the remaining oil over the thighs.
  6. Bake for 18 minutes. Flip the thighs and bake for an additional 14 minutes.
  7. Check that the internal temperature reaches 175°F (80°C) at the thickest part.
  8. Tent the chicken with aluminum foil and let it rest for 3 minutes before serving.

Notes

Don’t overcrowd the pan for even cooking. Use a meat thermometer for accuracy in doneness. Patting the chicken dry helps crispen the skin.
