Description

A crispy and juicy baked chicken dish with a toasty Parmesan crust that is perfect for weeknight dinners and family gatherings.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons Dijon mustard
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the chicken: Pat chicken breasts dry and if needed, pound to an even thickness.
  3. In a shallow bowl, combine Parmesan, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
  4. In another bowl, whisk together eggs and Dijon mustard until smooth.
  5. Dip each chicken breast into the egg mixture, then coat with the Parmesan-breadcrumb mixture.
  6. Place on the prepared baking sheet. For a crispier crust, spray with cooking spray or brush with melted butter or olive oil.
  7. Bake for 22–30 minutes, until golden and cooked through to 165°F (74°C).
  8. Let rest for 5 minutes before garnishing with parsley and serving.
