Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together the lemon juice, lemon zest, olive oil, garlic, Dijon mustard, salt, and pepper.
  3. Place the salmon fillets on a lined baking tray and brush the lemon sauce generously over the top of each fillet.
  4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Garnish with fresh parsley before serving.

Notes

For added flavor, marinate the salmon for 30 minutes in the sauce before baking.
