Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup chicken breast, diced
  • 2 eggs, beaten
  • 1 cup mixed veggies (like bell peppers, peas, and carrots)
  • 3 tablespoons bang bang sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add the diced chicken and cook until browned and cooked through.
  3. Push the chicken to the side and pour in the beaten eggs. Scramble until fully cooked.
  4. Toss in the mixed veggies and stir-fry for a few minutes until tender.
  5. Add the cooked rice, breaking it up to avoid clumps. Then stir in soy sauce and bang bang sauce, mixing well.
  6. Season with salt and pepper to taste.
