- 1 1/2 pounds beef chuck roast, boneless, sliced into thin strips
- 1 cup beef consomme or beef broth
- 1/2 cup low sodium soy sauce
- 1/3 cup dark brown sugar
- 1 tbsp. sesame oil
- 3 garlic cloves, minced
- 1/4 cup cornstarch
- 3 cups frozen broccoli florets (about one 14 oz bag)
- Cooked white or brown rice
Instructions
- Place the sliced beef strips into the slow cooker.
- In a bowl, mix together beef consomme, soy sauce, dark brown sugar, sesame oil, and minced garlic. Pour this mixture over the beef.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes.
- About 30 minutes before serving, stir in the frozen broccoli florets and let them cook.
- Mix the cornstarch with a few tablespoons of water to create a slurry and stir this into the slow cooker to thicken the sauce.
- Serve the beef and broccoli over cooked rice.
Notes
Avoid overcrowding the beef in the slow cooker for optimal cooking and flavor absorption. For a twist, consider adding ginger or rice vinegar.
