- 1/2 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon black pepper
- Optional: Fresh herbs (thyme or rosemary) for additional flavor
Instructions
- In a bowl, whisk together the olive oil, soy sauce, lemon juice, honey, minced garlic, Dijon mustard, and black pepper until well combined.
- Place the chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over the chicken and ensure it is thoroughly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (for best results, marinate for 2-4 hours).
- Preheat your grill to medium-high heat (about 375°F to 400°F).
- Remove the chicken from the marinade, letting the excess marinade drip off. Place the chicken on the grill and cook for 6-7 minutes per side or until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for about 5 minutes before serving to allow the juices to redistribute.
Notes
Avoid over-marinating as acidic ingredients like lemon juice can alter the chicken’s texture. Use an infused olive oil for enhanced flavor.
