- 2 lbs beef (brisket or chuck)
- 2 dried guajillo chiles
- 2 dried ancho chiles
- 4 cloves garlic
- 1 onion, chopped
- 4 cups beef broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- Corn tortillas
- Chopped onions and cilantro for garnish
- Lime wedges for serving
Instructions
- Toast the Chiles: In a dry skillet over medium heat, toast the guajillo and ancho chiles until aromatic, about 2-3 minutes.
- Blend the Sauce: In a blender, combine the toasted chiles, garlic, onion, beef broth, cumin, oregano, and salt. Blend until smooth.
- Sear the Beef: In a pot, heat oil over medium-high heat. Sear the beef on all sides until browned, about 5-7 minutes.
- Add the Sauce: Pour the blended sauce over the beef and add remaining broth. Bring to a simmer and cover. Simmer for 2-3 hours until fork-tender.
- Shred the Meat: Remove the beef and shred with forks, then return to the pot and stir to coat in sauce.
- Prepare Tortillas: Dip corn tortillas in broth, fill with shredded beef, top with onions and cilantro, and serve with lime wedges.
Notes
For best flavor, marinate the beef overnight. Serve with broth for dipping.
