Description

Deliciously sweet and nutty dream bars featuring blackberries and pistachios, topped with creamy coconut.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 can sweetened condensed milk (14 oz)
  • 1 cup fresh blackberries
  • 1/2 cup chopped pistachios
  • 1 cup shredded coconut
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan with cooking spray or butter.
  2. In a medium-sized bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well incorporated.
  3. Press the crumb mixture firmly into the bottom of the prepared baking pan to form the crust.
  4. In another bowl, mix the sweetened condensed milk, vanilla extract, and salt until smooth. Gently fold in the fresh blackberries and chopped pistachios.
  5. Pour the blackberry mixture over the crust, spreading it evenly with a spatula.
  6. Sprinkle the shredded coconut on top for that extra crunch and flavor.
  7. Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and the center is set.
  8. Remove from the oven and let it cool completely before cutting into bars.

Notes

Store leftover bars in an airtight container for up to 3 days or refrigerate for up to one week. They can also be frozen for up to 3 months.
