- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk (or dairy-free alternative)
- 1/3 cup maple syrup (or honey)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 1/2 cups blueberries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, baking powder, and salt until well combined.
- In another bowl, whisk together the milk, maple syrup, eggs, vanilla extract, and cinnamon until smooth.
- Pour the wet mixture into the dry ingredients and stir until combined, avoiding overmixing.
- Gently fold in the blueberries, being careful not to squish them.
- Pour the mixture into a greased baking dish and bake for 30-35 minutes or until the top is golden and set.
- Allow to cool slightly before serving.
Notes
For best results, use old-fashioned rolled oats instead of quick oats. If using frozen blueberries, fold them in directly from the freezer.
