Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or dairy-free alternative)
  • 1/3 cup maple syrup (or honey)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 1/2 cups blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, baking powder, and salt until well combined.
  3. In another bowl, whisk together the milk, maple syrup, eggs, vanilla extract, and cinnamon until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until combined, avoiding overmixing.
  5. Gently fold in the blueberries, being careful not to squish them.
  6. Pour the mixture into a greased baking dish and bake for 30-35 minutes or until the top is golden and set.
  7. Allow to cool slightly before serving.

Notes

For best results, use old-fashioned rolled oats instead of quick oats. If using frozen blueberries, fold them in directly from the freezer.
