Instructions

  1. In a large mixing bowl, whisk together the rolled oats, almond milk, coconut yogurt, chia seeds, lemon zest, and vanilla extract until fully combined.
  2. In a small saucepan, over low heat, combine the blueberries and sugar. Gently stir until the blueberries break down and form a warm compote—about 3-5 minutes. Remove from heat.
  3. In a jar or container, layer the oat mixture, then top it with the warm blueberry compote.
  4. Cover the jar and refrigerate overnight, allowing the oats to absorb all the flavors and thicken.
