- 2 ½ cups all-purpose flour
- 1 cup unsalted butter (cold, cubed)
- ½ teaspoon salt
- 6 tablespoons ice water
- 1 ½ cups blueberries (fresh or frozen)
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1 tablespoon blueberry puree or jam
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the flour and salt. Cut in the cold cubed butter until the mixture resembles coarse crumbs.
- Add the ice water one tablespoon at a time, gently tossing until the dough just comes together.
- Divide the dough into two discs, wrap in plastic wrap, and chill for 30 minutes.
- Make the blueberry filling by cooking blueberries, sugar, lemon juice, and cornstarch in a saucepan over medium heat until thickened, about 5-8 minutes. Cool completely.
- Roll out one dough disc into a rectangle about 1/8 inch thick and cut into four rectangles. Repeat with the second disc.
- Place four bottom rectangles on the baking sheet and spoon blueberry filling onto each, leaving a ¼ inch border.
- Brush edges with egg wash, place top rectangles over, and seal by crimping edges with a fork.
- Brush tops with egg wash and bake for 22-25 minutes, until golden brown.
- Cool completely on a rack before glazing.
- Make glaze by mixing powdered sugar, milk, and blueberry puree, then drizzle over cooled tarts.
