- 1 1/4 cups sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup pastry cream (or vanilla pudding)
- 1 cup chocolate frosting
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing just until combined. Avoid overmixing to keep the cookies tender.
- Drop dough by the tablespoon onto ungreased cookie sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden but the centers are still soft. Remember that they will continue cooking after removal from the oven.
- Let the cookies cool on the sheets for 5 minutes before transferring them to wire racks to cool completely.
- Once cooled, spread a layer of pastry cream on the bottom of half of the cookies and top with the remaining cookies to form sandwiches.
- Drizzle or spread chocolate frosting over the tops of the cookie sandwiches. Serve and enjoy!
