Ingredients

  • 1 cup butter, softened
  • 1 1/4 cups sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup pastry cream (or vanilla pudding)
  • 1 cup chocolate frosting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until combined. Avoid overmixing to keep the cookies tender.
  6. Drop dough by the tablespoon onto ungreased cookie sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden but the centers are still soft. Remember that they will continue cooking after removal from the oven.
  8. Let the cookies cool on the sheets for 5 minutes before transferring them to wire racks to cool completely.
  9. Once cooled, spread a layer of pastry cream on the bottom of half of the cookies and top with the remaining cookies to form sandwiches.
  10. Drizzle or spread chocolate frosting over the tops of the cookie sandwiches. Serve and enjoy!
