Description

A moist and tender cake infused with the natural sweetness of carrots, topped with rich chocolate icing, perfect for celebrations and cozy moments.


Ingredients

  • 2 large carrots, peeled and chopped
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Chocolate icing (for topping)
  • Optional: Walnuts or pecans (for added crunch), whole wheat flour (as a substitute), cocoa powder (to make a chocolate version)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan or two round pans.
  2. In a blender, combine the chopped carrots, vegetable oil, and eggs. Blend until smooth.
  3. In a mixing bowl, whisk together the sugar, flour, baking powder, and salt until well combined.
  4. Pour the carrot mixture into the bowl of dry ingredients, mixing gently until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared cake pan(s), smoothing the top for even baking.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Once cooled, pour the chocolate icing over the top, allowing it to drip down the sides.
  9. Slice and serve to delight your friends and family!

Notes

For best flavor, use freshly grated carrots. For a chocolate variation, add cocoa powder to the batter.
