- 2 large carrots, peeled and chopped
- 1 cup vegetable oil
- 4 large eggs
- 2 cups sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Chocolate icing (for topping)
- Optional: Walnuts or pecans (for added crunch), whole wheat flour (as a substitute), cocoa powder (to make a chocolate version)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan or two round pans.
- In a blender, combine the chopped carrots, vegetable oil, and eggs. Blend until smooth.
- In a mixing bowl, whisk together the sugar, flour, baking powder, and salt until well combined.
- Pour the carrot mixture into the bowl of dry ingredients, mixing gently until just combined. Be careful not to overmix.
- Pour the batter into the prepared cake pan(s), smoothing the top for even baking.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, pour the chocolate icing over the top, allowing it to drip down the sides.
- Slice and serve to delight your friends and family!
Notes
For best flavor, use freshly grated carrots. For a chocolate variation, add cocoa powder to the batter.
