Description

Delicious Butterbeer Cookies infused with butterscotch and white chocolate, perfect for any cozy occasion.


Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon butter extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips
  • 1 cup white chocolate chips
  • Optional: 1/2 teaspoon cinnamon
  • Optional: Chopped nuts
  • Optional: Gluten-free flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, mixing well after each. Stir in the vanilla and butter extracts.
  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually blend this dry mixture into the creamed mixture until just combined.
  5. Fold in the butterscotch and white chocolate chips until evenly distributed.
  6. Drop rounded portions of dough onto ungreased baking sheets, spacing them two inches apart.
  7. Bake for 10-12 minutes, until the edges are light golden brown and centers are soft.
  8. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For chewy cookies, slightly underbake them. Store cookies in an airtight container for up to 3 days at room temperature or freeze them for up to 3 months.
