Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups apples, peeled and diced
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press the mixture into the bottom of the prepared baking dish to form a crust.
  3. In a large mixing bowl, beat together the cream cheese, 1 cup sugar, and vanilla until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Fold in the diced apples and cinnamon.
  5. Pour the cheesecake mixture over the crust in the baking dish.
  6. Drizzle caramel sauce over the top and use a knife to swirl it into the cheesecake mixture.
  7. Bake for 35-40 minutes until set. Let cool, then refrigerate for at least 2 hours before slicing into bars.
