Ingredients

  • 4 tablespoons granulated sugar
  • 5 tablespoons melted butter
  • 40 ounces cream cheese (at room temperature)
  • 1 1/4 cups granulated sugar
  • 1/2 cup sour cream (at room temperature)
  • 2 teaspoons vanilla extract
  • 4 large eggs (at room temperature)

Instructions

  1. Preheat oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, 4 tablespoons sugar, and melted butter. Mix until resembling damp sand.
  3. Press the mixture into the bottom and halfway up the sides of a 9-inch springform pan. Bake for 7 minutes and set aside.
  4. In a large bowl, mix cream cheese for 30 seconds until smooth.
  5. Add 1 1/4 cups sugar, sour cream, and vanilla extract. Mix until well incorporated.
  6. In a separate bowl, whisk eggs until beaten.
  7. With the mixer on low, slowly pour in the eggs. Stop mixing once integrated to retain small lumps.
  8. Pour filling into the crust and smooth the top.
  9. Bake in the preheated oven for 30 minutes, then lower the temperature to 250°F and bake for an additional 45 minutes.
  10. Turn off the oven, leave cheesecake inside for 30 minutes, then cool for 1 hour. Refrigerate until chilled (6 hours minimum).
  11. Once chilled, remove the collar of the springform pan and slice using a hot knife for clean pieces.

Notes

For an extra touch, top with fresh berries or a drizzle of chocolate sauce. Avoid overmixing to prevent cracks.
