- 1 1/4 cups graham cracker crumbs
- 4 tablespoons granulated sugar
- 5 tablespoons melted butter
- 40 ounces cream cheese (at room temperature)
- 1 1/4 cups granulated sugar
- 1/2 cup sour cream (at room temperature)
- 2 teaspoons vanilla extract
- 4 large eggs (at room temperature)
Instructions
- Preheat oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, 4 tablespoons sugar, and melted butter. Mix until resembling damp sand.
- Press the mixture into the bottom and halfway up the sides of a 9-inch springform pan. Bake for 7 minutes and set aside.
- In a large bowl, mix cream cheese for 30 seconds until smooth.
- Add 1 1/4 cups sugar, sour cream, and vanilla extract. Mix until well incorporated.
- In a separate bowl, whisk eggs until beaten.
- With the mixer on low, slowly pour in the eggs. Stop mixing once integrated to retain small lumps.
- Pour filling into the crust and smooth the top.
- Bake in the preheated oven for 30 minutes, then lower the temperature to 250°F and bake for an additional 45 minutes.
- Turn off the oven, leave cheesecake inside for 30 minutes, then cool for 1 hour. Refrigerate until chilled (6 hours minimum).
- Once chilled, remove the collar of the springform pan and slice using a hot knife for clean pieces.
Notes
For an extra touch, top with fresh berries or a drizzle of chocolate sauce. Avoid overmixing to prevent cracks.
