A creamy and delicious Cherry Chia Pudding that combines sweet cherries with coconut milk for a nourishing start to your day.


Ingredients

  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 1 cup cherries (pitted and chopped)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, combine the coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and salt. Stir well to ensure the chia seeds are evenly distributed.
  2. Add the chopped cherries to the mixture and give it another gentle stir.
  3. Cover the bowl with plastic wrap or a lid, and place it in the refrigerator for at least 4 hours, or overnight to achieve a thicker, pudding-like consistency.
  4. Once set, give the pudding a good stir before serving.
  5. Serve chilled, optionally topped with extra cherries or a sprinkle of nuts.

Notes

For the best texture, stir the pudding halfway through the chilling process to break up any clumps of chia seeds. Use fresh cherries when in season; however, frozen ones can be substituted.
