  • 2 cups cooked and shredded chicken (use rotisserie or leftover chicken for a quick prep)
  • 8 oz cream cheese (best at room temperature for easy mixing)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley (or 1 tbsp fresh, chopped)
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (freshly ground recommended)
  • 2 tbsp melted butter
  • 1 package crescent roll dough (standard 8-count can)
  • 1/2 cup panko breadcrumbs (optional for extra crunch)
  • 1 large egg (beaten for egg wash)
  • 4 tbsp butter (for the roux)
  • 1/4 cup all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine shredded chicken, cream cheese, garlic powder, onion powder, dried parsley, salt, black pepper, and melted butter. Mix until combined. Chill for 10–15 minutes if the filling seems too loose.
  3. Unroll the crescent roll dough, separate into 8 sections. Place ~1/8 of the chicken mixture near the wider end of each triangle. Fold the dough over the filling and seal edges well.
  4. Place pillows seam-side down on the baking sheet. Brush each with beaten egg and sprinkle with breadcrumbs if desired.
  5. Bake for 18–22 minutes, or until golden brown. Rest for 3–5 minutes before serving.
  6. While baking, prepare the sauce: In a saucepan, melt butter, whisk in flour, then gradually add milk and cream, whisking until smooth. Simmer until thickened.
  7. Stir in Parmesan, garlic powder, salt, and black pepper. Keep warm.
  8. Spoon sauce over each pillow or serve on the side.

Notes

Use room-temperature cream cheese for a smoother filling. For a lighter version, consider using low-fat cream cheese and milk.
