- 1 cup semisweet chocolate chips
- 3 large egg whites
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract

Instructions
- Melt the chocolate chips in a double boiler or microwave, stirring until smooth. Let cool slightly.
- In a chilled bowl, whip the heavy cream until soft peaks form.
- In another bowl, beat the egg whites with the sugar and salt until stiff peaks form.
- Fold the melted chocolate into the whipped cream until mostly combined.
- Gently fold in the beaten egg whites in two additions to preserve volume.
- Stir in the vanilla extract.
- Use immediately as a filling or chill for at least 30 minutes.

For a vegan option, replace heavy cream with whipped aquafaba and add coconut cream.
