Description

A delicious and healthy cilantro lime quinoa salad, packed with protein and fresh flavors, perfect for warm days or barbecues.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or frozen)
  • 1/2 cup red onion, chopped
  • 1/2 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water, and bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed.
  4. In a large bowl, combine the cooked quinoa, black beans, cherry tomatoes, corn, red onion, and cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  6. Pour the dressing over the quinoa mixture and toss gently to combine.
  7. Serve chilled or at room temperature.

Notes

Make sure to rinse the quinoa well before cooking. Adjust lime juice and olive oil to taste; more lime juice adds extra zing! For added crunch, mix in chopped bell peppers or cucumbers.
