Description

A delightful banana bread with a spiced cinnamon swirl perfect for breakfast or as a cozy treat.


Ingredients

  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 1/3 cup (76 g) unsalted butter, melted and cooled slightly
  • 1 cup (200 g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt (about 1/8 teaspoon)
  • 1 1/2 cups (188 g) all-purpose flour
  • 1 tablespoon ground cinnamon (for the swirl)
  • 1 tablespoon brown sugar (for topping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash the bananas in a large bowl until mostly smooth, then stir in the melted butter.
  3. Add the granulated sugar, beaten egg, and vanilla; mix until combined.
  4. Sprinkle the baking soda and salt over the batter and stir in. Gently fold in the flour until just combined.
  5. Pour about two-thirds of the batter into the loaf pan and smooth the top.
  6. In a small bowl, mix the ground cinnamon with the brown sugar (optional) and sprinkle it over the batter.
  7. Spoon the remaining batter over the cinnamon layer and swirl gently with a knife.
  8. Sprinkle an extra pinch of brown sugar on top if desired.
  9. Bake for 55–65 minutes until a toothpick inserted comes out with a few moist crumbs.
  10. Cool the bread in the pan for 10–15 minutes, then cool on a rack before slicing.

Notes

For added flavor, consider using whole wheat pastry flour or stirring in nuts. Ensure bananas are very ripe for best results.
