- 3 ripe bananas (mashed; about 1 1/2 cups)
- 1/3 cup (75 g) melted unsalted butter
- 3/4 cup (150 g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup (120 g) all-purpose flour
- Optional: 1/2 cup chopped walnuts or pecans, or 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mash the ripe bananas in a large mixing bowl until mostly smooth.
- Stir in the melted butter until combined, then add the sugar, beaten egg, and vanilla, mixing until blended.
- Sprinkle the baking soda and salt over the batter, folding in the flour gently without overmixing.
- If adding, fold in nuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes until a toothpick comes out mostly clean.
- Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
Notes
Use very ripe bananas for the best flavor; avoid overmixing for a lighter crumb.
