  • 10 ounces frozen chopped spinach, thawed and thoroughly squeezed to remove excess moisture
  • 1 1/2 cups sour cream (full-fat or reduced-fat)
  • 1 cup mayonnaise (regular or light)
  • 1 package (about 1 ounce / 28–40 g) Knorr Vegetable Soup mix (dry)
  • 1 (8-ounce) can water chestnuts, drained and finely chopped
  • 3 green onions, thinly sliced (white and green parts)

Instructions

  1. Prepare the spinach: thaw the frozen chopped spinach in a bowl, then press in a clean kitchen towel or squeeze with your hands to remove as much water as possible. Excess moisture will make the dip thin.
  2. Chop the water chestnuts and green onions and set aside.
  3. In a large mixing bowl, combine the squeezed spinach, sour cream, mayonnaise, and the entire package of Knorr Vegetable Soup mix.
  4. Fold in the drained/chopped water chestnuts and chopped green onions until everything is evenly distributed. Avoid overmixing—just blend until uniform.
  5. Cover the bowl tightly with plastic wrap or transfer to an airtight container. Refrigerate for at least 2 hours; overnight chilling intensifies the flavors and gives the best texture.
  6. Before serving, stir once to reconstitute any slight separation. Taste and adjust seasoning—add a pinch of black pepper or a squeeze of lemon if you want brightness.

Notes
