- 1 cup full-fat cottage cheese
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar (optional)
- Neutral oil or butter for frying (about 1 tablespoon)
Instructions
- Preheat a nonstick skillet over medium heat. Lightly grease with oil or butter.
- In a bowl, combine cottage cheese, eggs, salt, and sugar (if using), mixing until homogeneous.
- Stir in flour and baking powder until a soft dough forms. Avoid overmixing.
- Divide the dough into 4 equal portions and shape into rounds about 1/2–3/4 inch thick.
- Cook the rounds in the skillet for 3–4 minutes until golden, then flip and cook another 3–4 minutes.
- Transfer to a wire rack or plate and let rest for 2–3 minutes before serving.
Notes
Use full-fat cottage cheese for the creamiest texture. Adjust heat to prevent over-browning.
