- 8 oz rotini pasta
- 2 boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Cook the rotini pasta according to the package instructions. Drain and set aside.
- Season the chicken breasts with Cajun seasoning.
- Heat the olive oil in a skillet over medium heat. Cook the chicken for about 5-7 minutes per side, until browned and cooked through. Remove from pan and slice.
- In the same skillet, add the heavy cream and chicken broth. Bring to a simmer, then add the diced tomatoes and Parmesan cheese. Stir until well combined and smooth.
- Add the cooked rotini and sliced chicken back into the skillet. Toss to combine and cook for an additional 2-3 minutes until heated through.
- Season with salt and pepper to taste. Serve hot, garnished with chopped parsley.
Notes
Avoid overcooking the chicken by using a meat thermometer; it should read 165°F when done. For variations, consider using chickpeas or tofu for a vegan option.
