Description

A comforting and flavorful dish featuring rotini pasta tossed in a creamy Cajun sauce with tender chicken slices.


Ingredients

  • 8 oz rotini pasta
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the rotini pasta according to the package instructions. Drain and set aside.
  2. Season the chicken breasts with Cajun seasoning.
  3. Heat the olive oil in a skillet over medium heat. Cook the chicken for about 5-7 minutes per side, until browned and cooked through. Remove from pan and slice.
  4. In the same skillet, add the heavy cream and chicken broth. Bring to a simmer, then add the diced tomatoes and Parmesan cheese. Stir until well combined and smooth.
  5. Add the cooked rotini and sliced chicken back into the skillet. Toss to combine and cook for an additional 2-3 minutes until heated through.
  6. Season with salt and pepper to taste. Serve hot, garnished with chopped parsley.

Notes

Avoid overcooking the chicken by using a meat thermometer; it should read 165°F when done. For variations, consider using chickpeas or tofu for a vegan option.
