Description

A creamy and delicious pasta dish featuring sun-dried tomatoes and a cashew-based sauce, perfect for cozy dinners or gatherings.


Ingredients

  • 8 oz pasta of choice (gluten-free if desired)
  • 1 cup raw cashews (soaked)
  • 1/2 cup sun-dried tomatoes (packed in oil)
  • 1/4 cup nutritional yeast or vegan parmesan
  • 3 cloves garlic
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Red pepper flakes to taste
  • Water (adjust for sauce consistency)

Instructions

  1. Soak the cashews in water for at least 30 minutes, then drain.
  2. In a blender, combine the soaked cashews, sun-dried tomatoes, garlic, nutritional yeast, olive oil, salt, and pepper. Gradually add water until you reach your desired sauce consistency.
  3. Cook the pasta according to package instructions until al dente.
  4. In a large skillet, mix the cooked pasta with the creamy sauce over medium heat, stirring until heated through.
  5. Plate the creamy pasta and garnish with fresh basil and a sprinkle of red pepper flakes.

Notes

For a thicker sauce, decrease water; for a thinner sauce, add more until desired consistency is reached. Garnish with additional nutritional yeast and basil for presentation.
