- 8 oz pasta of choice (gluten-free if desired)
- 1 cup raw cashews (soaked)
- 1/2 cup sun-dried tomatoes (packed in oil)
- 1/4 cup nutritional yeast or vegan parmesan
- 3 cloves garlic
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
- Red pepper flakes to taste
- Water (adjust for sauce consistency)
Instructions
- Soak the cashews in water for at least 30 minutes, then drain.
- In a blender, combine the soaked cashews, sun-dried tomatoes, garlic, nutritional yeast, olive oil, salt, and pepper. Gradually add water until you reach your desired sauce consistency.
- Cook the pasta according to package instructions until al dente.
- In a large skillet, mix the cooked pasta with the creamy sauce over medium heat, stirring until heated through.
- Plate the creamy pasta and garnish with fresh basil and a sprinkle of red pepper flakes.
Notes
For a thicker sauce, decrease water; for a thinner sauce, add more until desired consistency is reached. Garnish with additional nutritional yeast and basil for presentation.
