Ingredients

- 1 can white beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 2 cups vegetable broth
- 1 cup spinach or kale, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and sauté until translucent.
- Stir in minced garlic and cook for an additional minute.
- Add halved cherry tomatoes and cook until they start to soften.
- Pour in vegetable broth and bring to a simmer.
- Add white beans, chopped greens, oregano, salt, and pepper.
- Simmer for 10-15 minutes, allowing the flavors to deepen.

For a creamier texture, you can blend a portion of the stew while leaving some beans whole.
