Ingredients

- 1 can white beans, drained and rinsed
- 2 cups cherry tomatoes, halved
- 2 cups vegetable broth
- 1 cup spinach or kale
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the halved cherry tomatoes, cooking until they begin to soften, about 5 minutes.
- Incorporate the drained white beans, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- Stir in the spinach or kale and cook until the greens are wilted, about 2-3 minutes.
- Taste and adjust seasoning if necessary. Serve warm and enjoy!
Notes
For a creamier texture, blend a portion of the stew and return it to the pot. Serve garnished with parsley or nutritional yeast.
