Description

A comforting and creamy vegan stew made with white beans, cherry tomatoes, and aromatic herbs, perfect for cozy evenings.


Ingredients

  • 1 can white beans, drained and rinsed
  • 2 cups cherry tomatoes, halved
  • 2 cups vegetable broth
  • 1 cup spinach or kale
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the halved cherry tomatoes, cooking until they begin to soften, about 5 minutes.
  5. Incorporate the drained white beans, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 10 minutes.
  6. Stir in the spinach or kale and cook until the greens are wilted, about 2-3 minutes.
  7. Taste and adjust seasoning if necessary. Serve warm and enjoy!

Notes

For a creamier texture, blend a portion of the stew and return it to the pot. Serve garnished with parsley or nutritional yeast.
