- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 1/2 cups buttermilk
- 1 egg
- 1 tbsp hot sauce
- 6–8 thinly sliced chicken breasts
- 1/4 cup reserved oil from frying
- 2 cups milk
Instructions
- Heat oil in a deep fryer or large skillet until it reaches 325°F (165°C).
- In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.
- In another bowl, combine buttermilk, egg, and hot sauce.
- Dip chicken breasts first in the flour mixture, then in the egg mixture, and finally back into the flour mixture.
- Fry the chicken in batches for 3-5 minutes per side until golden brown and cooked through. Remove and drain on a paper towel-lined plate.
- In a separate pan, add reserved oil and heat on medium-high. Stir in flour until well-combined and cook for about 1 minute.
- Gradually whisk in milk until thickened, seasoning with salt and pepper to taste.
- Pour the gravy over the fried chicken before serving.
Notes
Avoid overmixing the batter for a lighter texture. Don’t overcrowd the frying pan for even cooking.
