Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 cups buttermilk
  • 1 egg
  • 1 tbsp hot sauce
  • 68 thinly sliced chicken breasts
  • 1/4 cup reserved oil from frying
  • 2 cups milk

Instructions

  1. Heat oil in a deep fryer or large skillet until it reaches 325°F (165°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.
  3. In another bowl, combine buttermilk, egg, and hot sauce.
  4. Dip chicken breasts first in the flour mixture, then in the egg mixture, and finally back into the flour mixture.
  5. Fry the chicken in batches for 3-5 minutes per side until golden brown and cooked through. Remove and drain on a paper towel-lined plate.
  6. In a separate pan, add reserved oil and heat on medium-high. Stir in flour until well-combined and cook for about 1 minute.
  7. Gradually whisk in milk until thickened, seasoning with salt and pepper to taste.
  8. Pour the gravy over the fried chicken before serving.

Notes

Avoid overmixing the batter for a lighter texture. Don’t overcrowd the frying pan for even cooking.
