Instructions

  1. Remove skin from chicken pieces if desired.
  2. In a large plastic bag, mix flour with paprika, salt, and pepper.
  3. Dip each chicken piece into buttermilk, then place in the bag, seal, and shake to coat.
  4. Arrange coated chicken on a tray and cover; let sit until flour forms a paste-like consistency.
  5. Heat vegetable oil in a large skillet to 350°F (175°C).
  6. Carefully place chicken in the hot oil, avoid overcrowding. Brown on both sides.
  7. Reduce heat, cover skillet, and cook for 30 minutes to keep chicken juicy.
  8. Remove cover, increase heat, and fry until crispy.
  9. Drain cooked chicken on paper towels; keep warm in the oven if frying in batches.
