- 8 chicken thighs, bone-in and skin-on (about 2–2.5 lb total)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper (optional for heat)
- Fresh herbs (parsley or thyme) for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Position a rack in the middle of the oven.
- Pat chicken thighs dry with paper towels.
- In a large bowl, whisk together olive oil, garlic powder, onion powder, smoked paprika, dried thyme, salt, black pepper, and cayenne (if using).
- Add the chicken thighs to the bowl and toss gently until each thigh is evenly coated with the spice mixture.
- Arrange the thighs skin-side up on a rimmed baking sheet or in a shallow roasting pan.
- Transfer to the preheated oven and roast for 40–45 minutes, or until the skin is deep golden-brown and an instant-read thermometer reads 165°F (74°C).
- For extra crispness, broil for 2–3 minutes at the end, watching closely.
- Remove from the oven and let rest for 5–10 minutes before serving. Garnish with fresh herbs if desired.
Notes
To reduce fat and calories, remove the skin after cooking. Store in an airtight container in the refrigerator for 3–4 days.
