- 4 boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 cup long-grain white rice
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup frozen mixed vegetables (optional)
Instructions
- Place the chicken breasts at the bottom of the crock pot.
- Add the chicken broth, rice, chopped onion, garlic powder, onion powder, salt, and pepper on top of the chicken.
- Stir to combine all the ingredients without overmixing.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and the rice is tender.
- If using, toss in the frozen vegetables during the last 30 minutes of cooking.
- Once done, shred the chicken with two forks, stir everything together, and mix in the shredded cheese until melted and well combined.
- Serve hot and enjoy your delightful meal!
