  • 1 cup Onions (diced; shallots can be a gentler choice)
  • 2 tablespoons Butter (use vegan butter for a dairy-free version)
  • 1 tablespoon Neutral Oil (olive oil also works well)
  • 1 teaspoon Salt (kosher salt helps improve texture)

Instructions

  1. Make the sauce: In a small bowl whisk together mayo, ketchup, rice vinegar, sweet relish, sugar, and chili flakes (if using). Chill while preparing the rest.
  2. Caramelize the onions: In a medium skillet over medium-low heat, heat butter and neutral oil. Add diced onions and a pinch of salt; cook until deep golden and sweet, about 12–15 minutes. Set aside.
  3. Cook the fries: Preheat oven according to package directions. Spread frozen fries on a baking sheet and toss with oil and salt. Bake until golden and crispy, about 20–25 minutes. Optionally, air-fry or pan-fry as desired.
