- 1 pound ditalini pasta
- 1 red or green bell pepper, diced
- 1/4 cup diced red onion
- 2 stalks celery, diced
- 1 cup English cucumber, diced
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon red apple vinegar
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
Instructions
- Bring a large pot of salted water to a rolling boil. Add the ditalini and cook until al dente, typically 8–10 minutes.
- Drain the pasta and rinse under cold running water to stop the cooking. Drain thoroughly; lay the pasta on a sheet tray to cool faster.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, red apple vinegar, sugar, salt, black pepper, garlic powder, and paprika until smooth.
- In a large mixing bowl, combine the cooled pasta with diced bell pepper, red onion, celery, and cucumber. Toss gently to distribute.
- Pour the dressing over the pasta and vegetables. Toss gently until everything is well coated.
- Cover and chill in the refrigerator for at least 1 hour before serving.
- Taste before serving and adjust seasoning if needed.
