Description

Perfectly roasted chicken thighs with crispy skin and juicy interior, seasoned with garlic, thyme, and smoked paprika.


Ingredients

  • 8 chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.
  2. Pat the chicken thighs dry with paper towels.
  3. Drizzle olive oil over each thigh and rub thoroughly.
  4. Mix spices in a small bowl and sprinkle over both sides of the thighs.
  5. Place thighs skin-side up on the baking sheet, ensuring they are not crowded.
  6. Roast for 35–40 minutes until the internal temperature reaches 165°F (74°C).
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra crispiness, broil for 1–2 minutes at the end of cooking. Avoid overcrowding the pan for best results.
