Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form a crust.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar, then add vanilla and mix well.
- Add eggs one at a time, mixing well after each addition.
- Fold in sour cream until thoroughly incorporated.
- Pour the batter over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set and only slightly jiggly.
- Turn off the oven, crack the door, and let the cheesecake cool slowly for an hour.
- Refrigerate for at least 4 hours or overnight before serving.
