Description

A warm and comforting gluten-free meatloaf made with oats, perfect for weeknight dinners and family gatherings.


Ingredients

  • 1 lb (454 g) ground beef or turkey
  • 1 cup rolled oats (certified gluten-free if needed)
  • 1/2 cup diced onion (about 1 small onion)
  • 2 large eggs
  • 1/4 cup milk (dairy or unsweetened plant milk)
  • 1/4 cup ketchup (for the mix)
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste (about 1 teaspoon salt, 1/2 teaspoon black pepper)
  • For the glaze: 1/4 cup ketchup
  • 2 tablespoons brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground meat, rolled oats, diced onion, eggs, milk, 1/4 cup ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Transfer the mixture to a loaf pan and shape it into a loaf.
  4. In a small bowl, mix together the glaze ingredients and spread evenly on top of the meatloaf.
  5. Bake for 60 minutes or until the internal temperature reaches 160°F (70°C) for beef or 165°F (74°C) for turkey.
  6. Let the meatloaf rest for 5-10 minutes before slicing and serving.

Notes

For a smoky flavor, you can add smoked paprika. Avoid overmixing to keep the meatloaf tender.
