Ingredients

  • 1 cup flaked almonds (or chopped nuts of your choice)
  • 1/2 cup shredded coconut
  • 1/2 cup peanut butter
  • 1/2 cup stevia
  • 50g (1.76 ounces) unsalted butter (or 1/4 cup coconut oil for dairy-free)

Instructions

  1. Line a baking tray with well-greased baking parchment paper.
  2. In a large bowl, combine the flaked almonds and shredded coconut.
  3. In a small saucepan over medium heat, place the peanut butter, stevia, and unsalted butter (or coconut oil).
  4. Heat until the butter has melted and the mixture is smooth and creamy.
  5. Pour the peanut butter mixture over the almond and coconut mixture and stir until well combined.
  6. Drop a tablespoon of the soft cookie dough onto the prepared baking tray, filling the tray with a single layer of cookie mounds.
  7. Place the tray in the fridge for a few hours for the cookies to set and harden.
  8. Enjoy your no-bake cookies chilled from the fridge and store leftovers in an airtight container.
