- 1/2 cup shredded coconut
- 1/2 cup peanut butter
- 1/2 cup stevia
- 50g (1.76 ounces) unsalted butter (or 1/4 cup coconut oil for dairy-free)
Instructions
- Line a baking tray with well-greased baking parchment paper.
- In a large bowl, combine the flaked almonds and shredded coconut.
- In a small saucepan over medium heat, place the peanut butter, stevia, and unsalted butter (or coconut oil).
- Heat until the butter has melted and the mixture is smooth and creamy.
- Pour the peanut butter mixture over the almond and coconut mixture and stir until well combined.
- Drop a tablespoon of the soft cookie dough onto the prepared baking tray, filling the tray with a single layer of cookie mounds.
- Place the tray in the fridge for a few hours for the cookies to set and harden.
- Enjoy your no-bake cookies chilled from the fridge and store leftovers in an airtight container.
