Ingredients

Scale
  • 4 large onions (about 148 g / 56 oz each)
  • 4 tablespoons extra-virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh herbs (such as thyme or rosemary), roughly 1–2 teaspoons chopped or a few sprigs for garnish

Instructions

  1. Fill a large pot with water and bring it to a boil.
  2. Add the whole onions to the boiling water and reduce the heat to a simmer.
  3. Cook the onions for about 30–40 minutes, or until they are tender.
  4. Drain the onions and place them on a serving dish.
  5. Drizzle the golden olive oil over the onions.
  6. Season with salt, pepper, and sprinkle fresh herbs on top.
  7. Serve warm as a cozy side dish.

Notes

For a richer finish, substitute part or all of the olive oil with butter. Check doneness by piercing an onion with a paring knife.
