Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add chopped onions and minced garlic; cook until softened, about 3-4 minutes.
  4. Stir in frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Simmer for 5-7 minutes until slightly thickened.
  5. Spread the beef mixture evenly into a casserole dish.
  6. Top with prepared mashed potatoes, spreading them to completely cover the filling.
  7. Dot the mashed potatoes with butter and sprinkle with cheddar cheese if using.
  8. Place in the preheated oven and bake for 20-30 minutes until the top is golden and bubbly.
  9. Let cool for 5 minutes before serving.
