- 2 large oranges
- 1 cup pistachios (shelled)
- 1 cup sugar
- 6 large eggs
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- Boil the whole oranges in water for about 1 hour, then let them cool. Once cool, quarter them and remove any seeds.
- In a food processor, blend the boiled oranges and pistachios until smooth.
- In a large bowl, whisk the eggs and sugar until pale and fluffy.
- Add the orange-pistachio mixture, baking powder, and salt to the egg mixture, and mix until well combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 40-45 minutes or until a skewer inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove it to a wire rack to cool completely. Dust with powdered sugar before serving.
Notes
For a richer flavor, consider toasting the pistachios before use. Ensure to use organic oranges as the peel is included in the recipe.
