Ingredients

  • 1 cup peanut butter (smooth or chunky)
  • 1 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or chopped dark chocolate
  • Optional: 1/4 cup chopped roasted peanuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt. Mix until well combined.
  3. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  4. Bake for about 10–12 minutes or until the edges are lightly golden.
  5. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are gluten-free by nature and can be made vegan by using a flax ‘egg’. For best results, avoid overmixing and chill dough before baking for thicker cookies.
