Description

A comforting and hearty skillet meal featuring chicken, turkey bacon, broccoli, spinach, and potatoes, all enveloped in a fragrant garlic butter sauce.


Ingredients

  • 4 chicken breasts
  • 4 slices turkey bacon, chopped
  • 2 cups spinach
  • 2 cups broccoli florets
  • 2 cups potatoes, diced
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add a drizzle of olive oil and heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 6-7 minutes on each side until browned and cooked through. Remove the chicken and set aside.
  3. Add the butter and minced garlic to the skillet. Sauté for 1 minute until fragrant.
  4. Add the diced potatoes and broccoli to the skillet. Cook for about 10-12 minutes until the potatoes are tender, stirring frequently.
  5. Stir in the spinach and cooked turkey bacon. Return the chicken to the skillet and cook for another 2-3 minutes until everything is heated through and the spinach wilts.
  6. Serve warm and enjoy!

Notes

This dish can be paired with iced tea or coffee. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months.
