- 4 chicken breasts
- 4 slices turkey bacon, chopped
- 2 cups spinach
- 2 cups broccoli florets
- 2 cups potatoes, diced
- 4 tablespoons butter
- 4 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same skillet, add a drizzle of olive oil and heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 6-7 minutes on each side until browned and cooked through. Remove the chicken and set aside.
- Add the butter and minced garlic to the skillet. Sauté for 1 minute until fragrant.
- Add the diced potatoes and broccoli to the skillet. Cook for about 10-12 minutes until the potatoes are tender, stirring frequently.
- Stir in the spinach and cooked turkey bacon. Return the chicken to the skillet and cook for another 2-3 minutes until everything is heated through and the spinach wilts.
- Serve warm and enjoy!
